Steak & Green Pepper Quesadillas

  • flour tortillas

  • hot sauce

  • long green pepper

  • mexican cheese blend

  • pepper jack cheese
    1 c
  • salt
  • smoky red pepper crema
    1/2 c
  • southwest spice blend
    2 tbsp
  • vegetable oil

    ![Step 1](step-1.avif) Wash and dry all produce. Halve, core, and thinly slice long green pepper crosswise into strips. Pat diced steak dry with paper towels.

    ![Step 2](step-2.avif) Heat a drizzle of vegetable oil in a large pan over medium-high heat. Add green pepper and cook, stirring occasionally, until slightly softened, 3-4 minutes.

    ![Step 3](step-3.avif) Add steak to the pan with green pepper. Season with southwest spice blend , pepper , and a big pinch of salt . Cook, stirring occasionally, until green pepper is tender and steak is browned and cooked through, 2-3 minutes. Turn off heat; remove from pan. Wipe out pan.

    ![Step 4](step-4.avif) Place flour tortillas on a clean work surface or cutting board. Sprinkle one half of each tortilla with pepper jack cheese . Top with the steak mixture, then sprinkle with mexican cheese blend . Fold tortillas in half to create quesadillas.

    ![Step 5](step-5.avif) Heat a drizzle of oil in the pan used for steak over medium heat. Add quesadillas and cook until tortillas are golden brown and cheese has melted, 4-5 minutes per side. 4 SERVINGS: Cook quesadillas in batches.
